

Ciao pizza lovers!
In the Pizza post (check out our recipe), we jumped right into the ingredients for the sauce and toppings for two delicious pizzas. Today, we’re slowing down to savor the foundational step of any great pizza—the dough!! This is where our journey continues, as we roll up our sleeves to create the authentic, airy base that will transport your pizza from “good” to “straight from the narrow streets of an italian city.”
Picture a classic Italian pizzeria: the aroma of freshly kneaded dough fills the air, rich with the promise of a perfect crust. This dough recipe isn’t just a means to an end; it’s an invitation to connect with the process, feel the ingredients, and experience the joy of food.

Ingredients
- 170 gr Flour type 00
- 120 ml water at room temperatura (25°C)
- 1 tsp salt
- 0.5 tbps dry yeast
Preparation
- Mix the flour and the dry yeast together in a bowl
- Slowly add half of the water while working the dough by hand. At this moment you can add the salt
- Add the remaining of the water while continuing to work the dough
- Transfer to the kitchen worktop and keep on working until its homogeneous and you form a ball. Cover it with the bowl and let it rest for about 10 or 15 minutes
- Knead the dough again for a couple of minutes and form a ball again
- Let the dough rest at room temperature (20-25 °C, it can be inside your oven with just the lights on) for minimum 2 hours, but ideally for 5 hours

For simplicity, this recipe suggests using only flour type 00 (the easiest to find outside Italy). But if you happen to find Manitoba flour, use it along with the 00 flour, respecting the proportions of 1/3 Manitoba to 2/3 00 flour
